Celery is a vegetable plant with all parts being edible. A common household staple, it is available all year long, with the best taste and quality during summer season.

What is Celery juice? Celery juice is extracted from the stalks and leaves of the plant.

Celery Juice Recipe:

It is best to pick rigid celery stalks with leaves that are not wilted or yellowed. Wash thoroughly and trim the tip and tail from the stalks then cut into 1 inch pieces. Keep the leaves.

Put 1/2 cup of water into a blender and add the celery. Start the blender on a low speed, then increase to puree. It should liquefy in about 30 seconds. Add more water if the contents are too thick for the blades to liquefy. Blend again until pureed.

Strain with cheesecloth into a pitcher. Chill celery juice and drink.
