Parsley Juice

Species Name: Petroselinum crispum

Also Known As: Garden Parsley, curly parsley, and Italian flat leaf parsley.

Parsley is an herb, not a vegetable. Curly parsley has bright green, curly leaves and became very popular because it couldn’t be confused with fool’s parsley, a poisonous weed that resembled the flat leaf variety of parsley. The Italian flat-leaf parsley is a darker shade of green and has smooth flat leaves. Flat leaf parsley is more fragrant and offers a less bitter taste than the curly variety.

What is Parsley Juice? Parsley Juice is made from the stems and leaves of the parsley plant. Many herbalists recommend that Parsley Juice be combined with other juices as it is simply too powerful on its own. It is important to note that drinking over 1/2 cup of parsley juice per day can be toxic. Pregnant women should not drink Parsley Juice.

Parsley Juice Preparation:

Making Parsley Juice requires a juicer. If using curly parsley, make sure to soak it in water with a capful of apple cider vinegar and a sprinkle of salt for about 10 minutes before juicing, then rinse well. This is done because curly parsley is prone to holding on to dust and dirt.

You can mix parsley juice with other juices to make it more palatable. Here is one mixed juice recipe that includes parsley.

Parsley Juice Recipe:

  • 4 Carrots
  • 1 Apple
  • 1/2 Beet; with greens
  • Handful of parsley

Put all ingredients in juicer to make one serving of juice.
