Montmorency Cherry Juice

Also Known As: Tart Cherry, Sour Cherry, Dwarf Cherry, Pie Cherry, Healing Cherry.

The Montmorency Cherry is the most popular variety of sour cherry grown in the United States, Canada and France. This cherry is specifically used in pie making. Montmorency cherries are part of the lighter-red amarelle cultivar of sour cherries. The tree was named for Montmorency Valley in France.

What is Montmorency Cherry Juice? Montmorency cherry juice is made from the cherry fruit. It is available in bottled juice, bottled concentrate, and frozen concentrate.

Montmorency Cherry Juice Recipe:

  • 1 lb. sour cherries
  • 2 lbs. sugar
  • 1/2 pint water
  • Several bottles of sparkling water
  1. Wash and pit all the cherries, then put them with the sugar in a large saucepan. Cover and let the mixture sit at room temperature for two hours so the cherries will absorb the sugar.
  2. Add water and mix until the sugar dissolves. Then bring the mixture to a boil, turn down and simmer for 15 minutes. Allow to cool a bit, then strain the liquid through a metal sieve into a separate saucepan. Press all the moisture out of the mixture before discarding.
  3. Continue to simmer the liquid until it begins to thicken and takes on the consistency of maple syrup. Then remove the pan from the heat and allow to sit at room temperature to cool. Once cool, put the concentrate in a sealed container and store in refrigerator.

When ready to serve, mix a spoonful or two with sparkling water or purified water to taste.
