What is Mango? The mango is quite a unique fruit.

It is the most popular Asiatic fruit and has acquired the nickname of "The King of Asiatic Fruits."

Green or unripe mangoes have a large amount of starch that turns into glucose, sucrose, and maltose as the fruit starts to ripen, disappearing totally when it reaches maturity.

Green mango is a good source of pectin, but this slowly diminishes once the stone forms.

The sour taste in unripe mango is the result of oxalic, citric, malic, and succinic acids that are present.
