The Lime is a citrus fruit. There are a number of different species and hybrids. This fruit is typically green to yellow in color and are typically round. They are a good source of vitamin C, are generally smaller and sweeter than lemons.

What is Lime Juice? Lime juice is the juice from the fruit of the lime tree. It is available in bottled natural and concentrate forms and also as a frozen concentrate.

Lime Juice Recipe:

Wash and dry limes. Make sure the limes are at room temperature and roll under your palm against the countertop before squeezing. You can also microwave for a few seconds and then let stand before cutting. Each lime will yield from 1 to 2 Tablespoons of juice.

Cut in half and use a citrus juicer or squeeze the limes over a bowl or jar until juice is extracted. Fresh lime juice should be used immediately for best nutritional value. It can be stored in the refrigerator in a tight container for up to two weeks, or frozen for six-months or more. Try freezing the lime juice in an ice cube tray.

Cut juice with water and add sweetener to taste.
