The thin liquid found in young or green coconuts is known as coconut juice, or coconut water because of its thin, watery consistency.

The outer husk of a young coconut is green to a mottled color with green, brown, and yellow.

The coconut meat in these immature coconuts is very soft, often gelatinous in texture. The older the coconut, the thinner and darker the husk, the coconut meat will be drier in texture and the amount of coconut juice decreases, until it dissipates completely.

What is coconut juice? Coconut juice is the water found naturally inside green, unripe coconuts. When fresh, coconut juice has a clear, watery consistency and a flavor that can range from sweet to slightly salty.

Coconut juice is available commercially in a pasteurized form, packaged in cans and bottles. The juice can be consumed plain, or with other juices or flavorings added.

Important note: Do not confuse this natural coconut juice with coconut milk. Coconut milk is a sweet, milky white cooking base that is made from the extraction of liquid taken from the grated meat of a mature coconut.

Coconut Juice Recipe:

Either bore a hole into the coconut and pour out juice, or cut off the end of the coconut and drink. The coconuts can be cooled in the refrigerator or over ice before opening.
