Cabbage is a cultivar of the species Brassica oleracea Linne. A cultivar is a variety of a plant that was developed from a natural species and maintained under cultivation. Cabbage is used as a leafy green vegetable. This herbaceous, biennial, dicotyledonous flowering plant has a short stem with a head of leaves.

Cabbage is usually green, but also comes in red or purplish varieties. The red cabbage has more nutrients due to its pigmentation. Savoy cabbage has more ruffled leaves, the red and green cabbage has smooth-textured leaves.

Cultured Cabbage Juice Recipe:

  • Fill a blender with washed and chopped cabbage. Add distilled water to the 2/3 mark on the blender and blend on high speed for one minute or until completely blended. Do this with two more batches and then pour into bowls, cover with plastic wrap and let the juice stand at room temperature for three days.
  • Strain the cultured cabbage juice and throw the pulp away. Refrigerate the liquid, it is ready to drink when cold. When the first batch is almost gone, take 1/2 cup of the cultured cabbage juice and add it to the new batch. This will speed the culturing process and the cabbage juice will be ready to drink in one day instead of three.

Carrots, celery, pineapple, tomato, or citrus fruit can be mixed with the cabbage for a better tasting juice. It can also be sweetened with honey.

It is recommended that you start with small amounts of the juice, gradually building up to a maximum of 3 1/2 ounces of cultured cabbage juice at one time.
